Our goal at Prairie View Cheese is to provide you, our discriminating customer, the opportunity to “Taste the Distinction”.
Our dairy is located on the prairie on the Rt 24 corridor west of Chenoa, Illinois. We are beginning our third generation of producing high quality milk. We felt we needed to find a way to bring our high quality milk directly to the consumer.
Prairie View Cheese was born in June of 2006. We selected Ziveny Cheese at Minonk, Illinois to make our cheese varieties. Ziveny Cheese, a family cheese maker for over 100 years, processes various varieties of cheese. Our cheese is the only “one producer milk” cheese made at Ziveny. Our milk is transported 20 miles to the plant at Minonk where craftsmen transform it into varieties of cheese in a true artisan fashion. Modern day cheese plants have mechanized the cheese-making process to the point that old world qualities of taste and texture are sacrificed. Not so at Ziveny’s, Randy the head cheese maker and plant manager Mike guide the tedious process every step of the way to make sure what you are tasting in the final product is everything you would expect.
Our dairy prides itself in the impeccable care we give to our herd of purebred Holstein cattle. They are cared for by a fine staff of herdsman around the clock.
Recently we have incorporated rotational grazing in our management scheme. It serves as a natural method of improving milk's nutritional value. The Omega-3 fatty acids in grazed milk is 4 times higher than nongrazed milk.
